Ingredients

Pasta, uncooked, 180 g, choose a shape such as spirals
Garlic, 2 clove(s), peeled
Sea salt, 2 pinch(s)
Cherry tomato, 8 regular cherry tomato(s), halved
Cucumber, 0.25 cucumber(s), 1/4 medium cucumber, Lebanese if possible, sliced
Black olives, drained, 8 olive(s), drained, seeds removed
Chives, 1 tablespoon(s), roughly chopped
Parsley, 1 tablespoon(s), chopped, use flat-leaf parsley if available
Basil, 2 tablespoon(s), roughly chopped
Black pepper, ground, 1 pinch(s)
Olive oil, 2 teaspoon(s)
Red wine vinegar, 3 teaspoon(s), or lemon juice
Honey, 1 teaspoon(s)

Cooking instructions

Bring a large pot of water to the boil. Add the garlic cloves and pasta and cook according to package instructions or until al dente. Drain and reserve the garlic. Place the pasta in a large bowl, sprinkle with a pinch of sea salt and set aside to cool slightly.

Meanwhile, make the dressing. Place the cooked garlic on a chopping board, sprinkle with a pinch of sea salt and mash it using a fork. Transfer the mash to a small bowl; add the oil, vinegar or lemon juice and honey, and mix well.

Add the tomatoes, cucumber, olives and herbs to the pasta. Mix gently to combine. Drizzle with the dressing and toss gently. Season with pepper and serve.
